Beef stew with vegetables

This hearty beef stew with vegetables is a comfort food classic! It will perfume the house with its

inviting scent and will delight the whole table.This meal is prepared quickly and baked in the oven

📍   1 kg (2.2 lb) stewing beef cubes

📍   30 ml (2 tbsp) canola oil

📍   2 chopped onions

📍   15 ml (1 tbsp.) Chopped garlic

📍   2 celery stalks, diced

📍   2 thyme sprigs

📍   1 bay leaf

📍   45 ml (3 tbsp) flour

📍   1.25 liters (5 cups) beef broth

📍   1/4 cup (60 ml) tomato paste

📍   salt and pepper to taste

📍   6 carrots, cut into pieces

📍   6 potatoes, peeled and cubed


   Preheat the oven to 190 ° C (375 ° F).

   Pat the meat dry with paper towels. In an ovenproof pan or casserole, heat the oil over medium-

       high heat. Sear a few cubes of meat at a time, 2 to 3 minutes, until each side is golden brown.

       Place the cubes on a plate.

   Remove excess fat from the pan. Over medium heat, brown the onions for 1 to 2 minute (s).

   Return the meat to the pan. Add the garlic, celery and herbs.

   Sprinkle with flour and stir. Pour in the broth and tomato paste. Season. Heat until the first

       simmers by scraping the sides of the pan with a wooden spoon to detach the cooking juices.

   Cover and bake for 1 hour.

   Add the carrots and potatoes to the pan. Cover and cook for an additional 1 hour, until the meat

       breaks up with a fork.
